Are you familiar with “Eh..What’s up,doc? usually said while chewing carrot. Yes! it’s Bugs Bunny with a big 2 front teeth.I wonder if Bugs Bunny like carrot cake and has the same personality to those who eat carrot cake.
Carrot cake, according to “Dessert Personality Test” you are a fun loving person, who likes to laugh, a fun to be with. People like to hang out with you, a very warm-hearted person, a little quirky at times and you have many loyal friends.Bugs Bunny is famous for his flippant, insouciant personality and his portrayal as a trickster.Well since Bugs Bunny is only a cartoon character and I’m not him so I cannot say he like carrot cake or not. 🙂
- 3 cups All Purpose flour
- 2 tsp. Baking soda
- 1 tsp. Baking powder
- 1 tsp. salt
- 2 tsp. ground cinnamon
- 1 bar (225 grams.) unsalted butter,softened
- 2 cups sugar
- 4 Large eggs
- 2 cups grated raw carrots
- 1 tsp. vanilla extract
- 1/4 raisins
- 1/2 cup chopped pineapple
- 1/2 cup chopped cashew nuts
Cream Cheese Topping
- 1/2 bar (113 grams) unsalted butter
- 1 bar (225 grams) cream cheese
- 1 1/2 cups confectioners’ (powdered or icing) sugar, sifted
- 1 tsp.. vanilla extract
Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven. Butter, or spray with a non stick spray, a 9 inch (23 cm) round cake pan and line the bottom of pan with parchment or wax paper.
In a separate bowl sift together the flour, baking soda, baking powder,salt, and ground cinnamon.
Remove 2 tablespoons (30ml) flour mixture; toss with raisins in small bowl to prevent raisins from sinking in batter.
Then in the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar at medium speed until well blended.Add eggs, one at a time, beating well after each addition.Fold in the flour mixture until incorporated. With a large rubber spatula fold in the grated carrots, grated apple, cashew nuts, and raisins.
Pour batter into prepared pan,spreading evenly to edge.
Bake 45 minutes or until wooden pick inserted in center comes out clean.
Cool cake in a pan or wire rack 10 minutes. Loosen edge of cake with knife or flexible metal spatula. Using oven mitts or hot pads, place wire cooling rack on top of cake in pan. Turn cake and pan over so wire rack is on bottom. Gently shake cake to release from pan.Remove pan.Cool completely.
Frosting: In the bowl of your electric, or with a hand mixer, beat together butter,cream cheese, and vanilla extract at medium speed until well blended. Add powdered sugar;beat until smooth and creamy. Add additional powdered sugar,if necessary,for desired consistency.
